Guacamole is a classic of Mexican cuisine, but at Domaines de la Taste, we decided to revisit it in the Corsican way, adding a touch of our local citrus fruits. Discover how to prepare a unique guacamole, with our organic avocados and Mediterranean ingredients.

Ingredients:

  • 2 avocados
  • 1 lemon
  • 1 clementine
  • 1 clove of garlic
  • A few fresh basil leaves
  • Salt, pepper
  • A drizzle of Corsican extra virgin olive oil

 

Preparation:

  1. Cut your avocados in half, remove the pit, and scoop out the flesh. Mash it with a fork.
  2. Squeeze the juice of a lemon and a clementine, then pour it over the avocado puree.
  3. Finely chop the garlic clove and add it to the mixture.
  4. Add a drizzle of olive oil to bring a Mediterranean touch to your guacamole.
  5. Season with salt, pepper, and a few finely chopped fresh basil leaves.

Tasting:

This revisited guacamole is perfect for your aperitifs! It can be served with corn chips, raw vegetables or as an accompaniment to dishes such as fajitas or summer salads.
